Lentil Mini Pizza Crusts
Makes 8-10 mini crusts

I’m always looking for delicious and nutritious alternatives to bread. This is an absolute gem (pizza crust in under 10 minutes!?) that I found on my new favorite Instagram account: @viedelavegan. I tried to make hearts like she does but it didn’t go so well…

1 cup red lentils (uncooked)
1 cup water
1 garlic clove
1 tsp sea salt
1 tsp rosemary or oregano (optional)

Blend everything together in a blender on high speed until smooth. Heat a skillet with a little oil in it over medium heat. Spoon the batter onto the skillet and fry for about 2 minutes on each side. Top with your favorite spreads or pizza toppings. These also taste great dipped in soups and stews!
