Coconut Lime Balls
Makes 15-20 balls
During the winter months I was craving rich nut-butter and chocolatey snacks, but with the sunshine comes a hankering for something light and fresh. This #vegan and #paleo energy bite recipe adapted from @spoonfulflavor truly hits the spot.
1/2 cup raw almonds
1/2 cup raw cashews
1/2 cup unsweetened shredded coconut + extra for coating
1 1/2 cups large soft dates, pitted
Zest and juice of 2-3 limes
Mix everything in a food processor until mixture starts to clump. Shape into balls and roll in extra coconut. Store in the fridge.
