2 Ingredient Tortillas (paleo, gluten free, dairy free, nut free, vegetarian)
Makes 1 tortilla
A sturdy, foldable, low carb tortilla that takes 5 minutes to make? That tastes great? That can also be used as a pizza crust? Yes, this is real. And the only ingredients you need are eggs and coconut flour.
2 whole eggs
1 egg white
2 Tbs coconut flour
A dash of spices, optional (I used garlic salt for my tortilla)
Oil, to coat skillet
Whisk together the eggs, egg white, flour, and spices until the batter is nice and smooth with no clumps of flour. Heat a skillet coated with oil (I use olive oil or coconut oil, depending on the flavor of tortilla I’m doing) over medium heat. Add batter to skillet so that it covers the entire surface of the skillet, forming a large circle. Wait until the batter starts to bubble and is no longer runny. Then flip and briefly cook the other side. The tortilla may poof up, but it flattens out again after it’s taken off the heat. Remove from the skillet. Add toppings and bake to make a pizza, make an open faced sandwich, serve as naan with Indian food, dip into hummus, or use as a wrap!
**For a crispier tortilla, replace the 2 whole eggs and 1 egg white with 4 egg whites**
