Ultimate Veggie Burgers (gluten free, dairy free, vegetarian)
Makes 12-14 patties
This is a throw-it-all-together type of burger that is really easy and super satisfying. It’s one of my favorite vegetarian dishes to serve people (particularly meat lovers) who don’t believe vegetables can be filling.
4 medium sweet potatoes, cooked and mashed (Speedy version: poke holes and cover with damp paper towels, microwave until tender.)
1 cup cooked grains (brown rice, millet, quinoa, bulgur)
1 medium yellow onion, chopped
4 handfuls chopped kale
1/4 cup ground flaxseed
1/2 cup almond flour
Seasonings (salt, pepper, onion powder, paprika, cumin etc)
Preheat oven to 375 degrees F/190 degrees C. Mix all ingredients together in a bowl and form patties. Bake on parchment lined baking sheets until firm, about 35-40 minutes. Serve on buns or lettuce with favorite toppings and sauces. *I’ve left out the beans in support of my friends who aren’t fans of the ‘musical fruit,’ but feel free to throw beans or chickpeas into the mix.
