Raspberry Summer Salad (vegan, paleo, gluten free, dairy free, nut free, vegetarian, raw)

Salads are not for everybody. However, I find that most people who don’t like eating salads are simply in need of a delicious dressing. This simple raspberry dressing adds flavor and color to any salad. I use it to liven up a grilled chicken and quinoa salad.
1 cup frozen raspberries, defrosted
3 Tbs white balsamic vinegar
1/2 tsp sea salt
For the dressing: Drain most of the liquid from the defrosted raspberries. Add the white balsamic and salt and mix well. Set aside.
For the salad: Place mixed greens in a shallow bowl and top with cooked quinoa, grilled chicken, dressing, crumbled feta cheese, and sunflower seeds.
