Cauliflower Pizza Crust (gluten free, nut free, vegetarian)
Makes 1 medium pizza (serves 1-2)
The mother of all veggie crust pizzas. No it doesn’t taste like cauliflower. Takes less than 10 minutes to prepare and doesn’t even need much time in the oven. You don’t even need a food processor- just use a cheese grater to rice your cauliflower. Add broccoli for a green twist!
1 medium cauliflower head
2 heaping Tbsp almond or buckwheat flour
1/2 cup shredded mozzarella
Seasonings of choice, to taste: sea salt, pepper, garlic powder, oregano, etc.
Preheat oven to 410 degrees F/210 degrees C.
Rinse and separate your cauliflower into florets. Process in food processor until you have a rice texture. You can also do this using a cheese grater. Place in a bowl and microwave on high for 5 minutes. Let cool and then squeeze out as much liquid as possible using a kitchen towel. Return to mixing bowl and add egg, flour, cheese, and seasoning. Mix well and then form your pizza on a baking sheet covered with parchment paper and greased with oil (this is important to prevent the pizza from sticking!). Bake for 8-12 minutes, until the crust is firm to the touch and starting to brown. Add your toppings and return to oven until the the toppings are hot.
