5 Minute Flatbread (vegan, paleo, gluten free, dairy free, nut free, vegetarian)
Makes one flatbread
I know I say this about every new pizza crust recipe I find, but this one from @rebelrecipes is definitely my new favorite. I call it flatbread because it’s so versatile and reminds me of naan bread more than your typical pizza crust. With its great taste and texture, it’s hard to believe that this bread is gluten free, low GI, high in nutrients, and takes only FIVE MINUTES to make!!!!!!
1/2 cup (1 dl) buckwheat flour
1 tsp olive oil
1/2 tsp baking powder
Pinch black pepper
1 tsp sea salt
1/4 cup (1/2 dl) water
Add all ingredients except the water to a bowl and mix well. Then add the water and mix into a sticky dough. Turn the dough out onto a floured surface and roll or press it into your bread shape. Cook for a couple minutes on each side in a hot skillet.
*Serve with hummus or other veggie spread.
*Take away the pepper and use as a nice breakfast toast, with some cheese or Chia Jam.
*To make a pizza, add your toppings and bake or broil until the toppings are hot and the cheese is melted.
