Oven-Roasted Asparagus (paleo, gluten free, dairy free, nut free, vegetarian)
Asparagus is a spring veggie loaded with nutrients. Research even shows that it can neutralize cell-damaging free radicals and support digestive health. This is my absolute favorite way to eat asparagus, salty and bursting with garlic and lemon flavor.
1 large bunch asparagus, washed and trimmed (trim by snapping off the ends)
3 Tbsp olive oil
1/2 tsp sea salt
1/2 tsp ground black pepper
1 garlic clove, minced
1-2 Tbsp grated Parmesan (optional)
Juice from 1/2 lemon
Preheat oven to 425 degrees F/220 degrees C.
Place asparagus on a baking sheet and toss with olive oil, salt, pepper, and garlic. Arrange in a single layer and sprinkle with Parmesan. Bake until tender, 12-15 minutes. Sprinkle with lemon juice just before serving.
