Vegan banana bread (vegan, paleo, gluten free, dairy free, sugar free)
This clean mean vegan banana bread is so melt-in-your-mouth delicious that nobody will believe it’s healthy. It’s shape is a little funky and takes a long time to bake, but it is a game changer! 2 flax eggs (2 Tbsp ground flax + 5 Tbsp water in the fridge for at least 15 minutes) *or 2 eggs for non-vegan!*
1/4 cup nut butter (I used peanut)
2 Tbsp melted coconut oil
1/4 cup almond or coconut flour
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp vanilla
Pinch sea salt
Preheat oven to 350 degrees F/175 degrees C.
Mix together bananas, flax eggs, nut butter and coconut oil with a food processor, blender, or hand mixer. Add the remaining ingredients and mix again until smooth. Pour into a greased or silicone loaf pan and bake for 55-60 minutes, until a toothpick comes out clean. Flip out of loaf pan and cool before slicing and serving.
