Cauliflower Fried Rice (gluten free, dairy free, nut free, vegetarian)
I was so surprised by how much this tasted like ‘normal’ fried rice that I had to test it out with my teammates @emmasoberglund @sarabjork18. They had the same reaction- how can this NOT be rice? The cauliflower taste is completely hidden by the delicious soy and sesame flavors. This dish is light yet filling from the colorful veggies. It was delicious straight from the pan but maybe even better eaten cold for lunch the next day!
1 large head of cauliflower, riced using a cheese-grater or food processor
2 Tbsp sesame oil
1 large carrot, cubed
2 garlic cloves, minced
1 cup frozen peas
1 large red pepper, chopped
2 eggs (replace with scrambled tofu for vegan)
1/4 cup tamari (or soy sauce for non gluten free)
6 green onions, chopped
Stir fry carrots and garlic in sesame oil over medium heat for 5 minutes. Add the cauliflower, frozen peas, and red pepper and stir fry until cauliflower is hot and slightly soft. Turn the heat down. Make a well in the middle of the mixture and add the eggs. Scramble the eggs and mix into the rest of the mixture. Add the tamari and green onions, mix and serve. Garnish with more green onions. *This is just a basic recipe-use whatever veggies and proteins you like. Cooked chicken or pork, cubed tofu, shelled edamame, etc. I like to add a tablespoon of chili-garlic sauce for a nice kick.
