Ali’s Curried Chicken Salad (gluten free, nut free)

This is my simple recipe for a light and refreshing curried chicken salad. I’ve skipped the mayo and opted for a mixture of avocado and tangy Greek yogurt in order to get that cool creaminess. You can serve it with some greens as a salad, rolled up in a tortilla as a wrap, or even scooped onto some dark, whole grain bread for a curried chicken salad sando!

1 cup cooked, shredded chicken
1 avocado
1 heaped Tbsp Greek yogurt (sub lactose free or dairy free)
1 Tbsp curry powder
Salt and pepper, to taste
Optional: chopped apple, walnuts, grapes, raisins, celery *These are some of the ingredients that are typically found in a curried chicken salad, but feel free to make it your own!*

Mash the avocado and stir in the yogurt and curry powder under smooth. Add salt and pepper to taste. Carefully fold in chicken and your other ingredients of choice.
