Asian Style Fish Packets (gluten free, dairy free, nut free)
Unfortunately I didn’t film this recipe since I was totally winging it, but it was super quick and easy and tasted like it was from a restaurant. The fish is bursting with flavor and melts in your mouth. The dense black rice creates the perfect balance and soaks up the juices. This is my new go-to fish recipe!
2 large fish fillets (I like haddock and cod)
2 large garlic cloves, minced
1 tsp grated ginger
1 tsp sambal oelek
1 spring onion, sliced
Soy sauce (tamari for GF)
Salt and pepper
Olive oil, for coating foil
Preheat oven to 375 degrees F/190 degrees C.
In a bowl, form a paste by mixing together the garlic, ginger, and sambal oelek with a fork. Cut two pieces of foil large enough to fold over one fillet of fish. Brush the foil with olive oil. Season the fillets with salt and pepper and place on the foil (1 fillet per foil). Spread the paste generously over the fish. Drizzle over some soy sauce and throw on the spring onion slices. Fold up the sides of the foil and scrunch them together to form a loose but well-sealed packet. Cook in the oven for 15 minutes. Serve, juices and all, with black rice and veggies.
