Baked Chocolate-Chip Oatmeal (vegan, gluten free, dairy free, nut free, sugar free)
Tastes like cake but it’s breakfast!!! No sugar, flour, dairy, or egg.
1/2 cup gluten free oats
1/2 cup mashed banana
1/4 cup plant based milk
1/4 tsp vanilla extract
Pinch sea salt
Extra spices (cinnamon, ground ginger, nutmeg, etc), optional
Handful dairy free dark chocolate chips/chunks (I use Lindt 85%)
Preheat oven to 350 F/175 C.
Mix together oats, banana, milk, vanilla, and sea salt. Add any spices you like in your oatmeal- I love cinnamon and ginger. Stir in chocolate. Scoop into a well-greased ramekin, mini loaf tin, or mini spring form. Bake for 20 minutes or until firm. Enjoy while warm!
