Baked Sweet Potato Chips (paleo, vegan, gluten free, dairy free, nut free, vegetarian)
These take a while to bake, but the wonderfully salty and crispy result makes it totally worth it!
1 sweet potato
1 Tbsp olive oil
Seasonings to taste such as sea salt, freshly ground black pepper, garlic powder, etc.
Preheat oven to 400 F/205 C.
Peel and thinly slice your sweet potato. The thicker the slices the longer they will take to get crispy. Add the sweet potato slices, olive oil, and seasonings to a bowl and mix to coat the slices evenly. Place a rack over a baking tray that is lined with parchment paper. Lay the slices on the rack in a single layer. Bake for at least an hour, checking after 40 minutes and removing any smaller slices that are turning golden and crispy. When the rest of the slices are ready, remove the rack and tray and leave to cool. Enjoy with dip, taco fillings, or just straight off the rack!
