Banana Blender Pancakes (vegan, gluten free, dairy free, nut free, sugar free)
Makes about 10-15 pancakes
Sometimes I want pancakes that only require a spoon for mixing, but sometimes I’m craving more traditional fluffy pancakes. Both are possible with the wonderfully nutrient rich banana! These can be whipped up in a couple minutes and there’s even a vegan option. Adapted from @mtnmamacooks.
2 cups (4.5 dl) gluten free oats
1 1/4 cup (3 dl) milk of choice (I like vanilla almond milk)
1 1/2 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon
Pinch sea salt
1 egg (or chia/flax egg)
Oil, for coating skillet
Blend oats, milk, banana, baking powder, vanilla, cinnamon, and sea salt until smooth. Add egg (chia egg or flax egg) and pulse to combine. Heat a skillet over medium heat. Melt your oil and pour batter into skillet. Cook for 2-3 minutes each side (flip when bubbling) and serve immediately.
