Banoffee Pie

Banoffee Pie (vegan, gluten free, dairy free)
Serves 8-10

Banana and toffee. Banoffee. How can you not love this combination of flavors…and words!? I first heard about Banoffee Pie from a scene in Love Actually, but it quickly became a favorite when Anita Asante, the Banoffee Pie Queen herself, made one for our soccer team a few years ago. The decadent traditional recipe takes sweetness to a new level, with a sugary buttery crust, dense caramel filling, and fluffy whipped cream topping. Luckily, @mynewroots created her own #vegan #glutenfree#soyfree #refinedsugarfree version that @ohsheglows adapted, and it is out of this world. You will never go back to the ‘real’ recipe- even Anita approves! *This recipe requires the coconut milk to chill overnight*

Crust:
1/2 cup raw almonds
2 cups gluten-free oats
1/2 tsp cinnamon
1/4 tsp sea salt
1/4 cup coconut oil, softened
1-2 Tbsp maple syrup
Water, if needed

Raw Caramel Toffee:
1 1/2 cups large soft dates, pitted
3 Tbsp smooth almond butter
1 tsp fresh lemon juice
1/4 tsp sea salt
1/2 tsp vanilla

Topping:
1 (14-ounce) can full-fat coconut milk, chilled overnight
1-2 large ripe bananas, sliced into “coins”
Shaved dark chocolate, optional

Preheat the oven to 375 degrees F/190 degrees C.
Process all crust ingredients in the food processor until you have a sticky crumbly mixture. Add water 1/2 Tbsp at a time if it is too dry. Press the crust into a tart pan (or springform cake pan) that has been greased with coconut oil. Bake for 12-14 minutes, until starting to turn golden.
While the crust is baking, process all caramel toffee ingredients until smooth. Again, you can add a tiny bit of water to help with the consistency.
Remove the white cream from the top of the chilled coconut milk, leaving the water in the can. Whisk the cream until smooth and fluffy.
When the crust has cooled, assemble the pie: first spread all of the caramel toffee onto the crust, then add half of the banana slices. Next spread all of the whipped coconut cream over the bananas before topping with the remaining banana slices. Garnish with shaved chocolate.
