Breakfast Cookies

Breakfast Cookies (vegan, gluten free, dairy free, sugar free)
Makes 6 large or 8 small cookies

While you may have noticed that I’m a bit of a pancake addict, I don’t always have time in the mornings to make a hot breakfast. These hearty and clean cookies are the perfect on-the-go solution. I see a lot of recipes for breakfast cookies that use applesauce, honey, egg, flour, etc., but I’ve kept things simple and consequently my recipe is #glutenfree #sugarfree and #vegan. Go to town with your own mix-ins!

1 ripe banana
1/2 cup gluten free oats
1/4 cup unsweetened shredded coconut
2 Tbsp nut butter
1/2 tsp cinnamon (optional)
1/4 tsp vanilla
Chia seeds, pumpkin seeds (optional)

Preheat oven to 400 degrees F/200 degrees C.
Mash the banana. Add the remaining ingredients and mix well. Shape into cookies and bake for 10 minutes. Store in an airtight container.
*Mix-in ideas: raisins, dried cranberries, goji berries, blueberries, dark chocolate chips, sunflower seeds, ground flax, hemp seeds.
*For a #nutfree version, skip the nut butter and just use a little less of the dry ingredients
