Brownie Granola (vegan, gluten free, dairy free, nut free, sugar free)
Smells like brownies and tastes like brownies, but this chocolatey granola is sweetened purely by fruit and will give you long-lasting energy. I made mine nut-free for @beastmodesoccer, but you get a supreme crunch from the buckwheat and quinoa. Top your yogurt with it or eat it by the handful.
5 cups (12 dL) of your favorite granola ingredients: I used 2 cups gluten free oats, 1 cup raw buckwheat, 1/2 cup sunflower seeds, 1/2 cup hemp hearts, and 1 cup uncooked quinoa
1 1/2 cups (3.5 dL) large soft dates, pitted
1 cup (2.5 dL) unsweetened applesauce/apple purée
6 Tbsp coconut oil
4 Tbsp raw cacao powder or cocoa powder
Preheat oven to 350 degrees F/175 degrees C.
Mix together your dry granola ingredients in a large bowl.
Add applesauce, dates, and coconut oil to a saucepan over low heat. Stir and simmer until dates can be broken apart with the spoon. Remove from heat and add your cacao. Mix and break apart dates until you have a smooth thick sauce. Pour over your granola and make sure everything is coated in the chocolate sauce. Spread over two baking sheets covered in greased parchment paper, making sure you don’t have clumps that are too large.
Bake for 35-45 minutes, taking the trays out and stirring the granola around every ten minutes. When the granola is crispy but not burned, remove from the oven and allow to cool before serving. This is when it gets really crispy! Store in an airtight container for up to a month.
