Buckwheat Breakfast Porridge (with raw option)

Buckwheat Breakfast Porridge (raw, vegan, gluten free, dairy free, nut free, sugar free)

Buckwheat is a pseudo grain, so while its name and appearance might make you think it’s a cereal grain, it’s actually a fruit seed related to rhubarb. It is high in essential nutrients and fiber, providing long lasting energy. Oh and it tastes nutty and delicious!

1 cup raw buckwheat groats, soaked in water for at least 1 hour, or overnight
3/4 cup your choice of milk
1 Tbsp chia seeds
1 tsp vanilla extract
Favorite sweetener and toppings, to taste

Drain your buckwheat and rinse well. Place your buckwheat in a blender with the milk, chia, and vanilla. Blend until slightly smooth. If making raw porridge, add your choice of sweetener (for me 1-2 Tbsp is enough), quickly blend again, and serve with your favorite toppings. For a hot porridge, add to a saucepan on low heat and mix in your toppings. *Topping suggestions: chopped fresh or dried fruit, cinnamon, coconut, cacao, nut butter, chopped nuts, seeds, chocolate chips.
