Butternut Squash Pancakes
Makes 10-12 medium pancakes

Move over banana- these healthy and delicious pancakes are an easy way to eat some veg for breakfast! The pretty orange color and dash of cinnamon make these super warming- the perfect breakfast for a cold winter morning🔥

1 cup (2.5 dl) mashed up roasted butternut squash
2 eggs
3/4 cup (<2 dl) whole wheat flour
1 tsp baking powder
1 tsp vanilla extract
Sprinkle of cinnamon
1-2 Tbsp milk of choice, as needed
Oil or butter, to coat the pan

Measure your butternut squash by smashing your roasted pieces/cubes into the measuring cup and adding and smashing until you have 1 cup. Then add the squash and all remaining ingredients to your blender and mix until smooth. **Add your milk 1 Tbsp at a time if your blender can’t quite get things going!** Coat a pan on medium heat with oil or butter and add your pancakes. Flip when they start to bubble and cook for 1 minute more. Serve with your favorite toppings!
