Carrot Cake Chia Pudding

Carrot Cake Chia Pudding (raw, vegan, gluten free, dairy free, nut free, sugar free)
Serves 1
Carrot cake for breakfast. Yes please! Add ingredients or toppings as per your favorite carrot cake recipe.
1 handful shredded carrot
1/4 cup (.5 dL) gluten free oats
2 Tbsp hemp hearts
2 Tbsp chia seeds
1/2 tsp cinnamon
3/4 cup (1.5 dL) unsweetened coconut milk or nut milk
1/2-1 Tbsp maple syrup (optional, especially if milk is sweetened)
Add all ingredients to a jar and shake well. Chill for at least 2 hours. Add topping and go!
