Chia Jam

Chia Jam (paleo, vegan, dairy free, gluten free, nut free, sugar free)
Makes about 1.5 cups (3.5 dl) jam

Unfortunately, many supermarket jams out there contain more added sugar than fruit. I firmly believe that fruit, berries in particular, is already so lovely and sweet that it should be left alone. Obviously one option is to stick with fresh fruit, but sometimes it’s nice to have something thick and spreadable to have on your toast or to swirl into some yogurt. Thanks to the magic of chia, I bring you a jam that is cheap, easy, and quick to make, with absolutely no added sugar!

2 cups (5 dl) frozen berries (you can also use fresh)
1-2 Tbsp fresh squeezed lemon juice
2 Tbsp chia seeds

Defrost the berries (if needed) in a small saucepan over low heat. Add the lemon juice. When the berries have broken down, mash them up until you reach your desired consistency. Remove from heat and add the chia seeds. Mix well and let cool. Store in a jar in the fridge for up to 2 weeks. The jam will continue to thicken as it chills.
