Chicken Lettuce Wraps (gluten free, dairy free, nut free)
Serves 4 (3 wraps each)
This recipe is dedicated to my 2009 Pali Blues teammate @adelaidegay who has been killing it for Kvarnsvedens IK in the Swedish Elitettan. I’ve simplified a @pinchofyum recipe, cutting down the ingredients while making sure all the flavor is still there. The sauce is so good that I use it with veggies, tofu, anything and everything! But the best part about this dish might be that it takes less than 30 minutes to prepare!
500 grams/1 lb ground chicken
2 red bell peppers
2 cloves garlic, minced
1 Tbsp grated ginger
1 Tbsp sambal oelek (chili paste)
1 Tbsp honey
3 Tbsp water
4 Tbsp tamari or soy sauce
Juice of 2 limes
12 large lettuce leaves, for wrapping
2 Tbsp sesame oil
Make the sauce by stirring together the garlic, ginger, sambal oelek, honey, water, soy sauce, and lime juice. And half of the sauce to the ground chicken. Mix well and let marinade for 10 minutes. Chop your bell peppers into small pieces. Heat sesame oil in a large skillet over medium heat. Add the marinated chicken and sauté for about 10 minutes, or until the chicken is cooked through. Add the bell pepper and the remaining sauce and cook for another 5 minutes. Serve by scooping into the lettuce leaves.
