Chocolate-Chip Chickpea Blondies (gluten free, dairy free, vegan)

A healthy treat from @ambitiouskitchen with a secret nutritious ingredient that nobody will detect! Chickpeas are low GI, being rich in fiber, and also a great source of antioxidants. Plus, recent studies show that they are really high on the food satiety scale- in other words, they are highly effective at making your feel satisfied and less hungry! A delicious AND filling bar? Exactly what I want from a snack.
One can chickpeas, rinsed and drained
1/2 cup (1.5 dL) all-natural peanut or almond butter
1/3 cup (1 dL) sweetener: maple syrup for vegan, honey for non-vegan)
2 tsp vanilla
1/2 tsp sea salt
1/4 tsp baking soda
1/4 tsp baking powder
1/3 cup (1 dL) dark chocolate squares/chips
Preheat oven to 350 F/175 C.
Grease a square baking dish with coconut oil or line with parchment paper. Blend all ingredients except the chocolate in a food processor until smooth. If using large chunks of chocolate, add and pulse until chocolate is mixed through. Otherwise stir in chocolate chips. Spread into the baking dish and bake for 20 minutes. Cool before cutting into squares.
