Clean Butterfinger Bars

Clean Butterfinger Bars (vegan, gluten free, dairy free)
Makes 15 bars or 20 balls

While I wish I could give up sugar completely, I think staying away from the processed and refined stuff is a good step in the right direction. Making clean versions of some of my favorite treats has made this transition a lot easier. I use natural sweeteners and add ingredients that provide important nutrients. In these bars, natural peanut butter and flax seed give you a protein and fiber boost, while dark chocolate is a powerful source of antioxidants.

1 cup gluten free oats
1/2 cup crunchy peanut butter (no added sugar or salt)
1/4 cup crushed flax seed
8-10 large soft dates, pitted
2 heaping Tbsp coconut oil, softened
Dark chocolate, melted (I use 90% cocoa that contains no dairy)

Blend the oats, peanut butter, flax seed, dates, and coconut oil in a food processor until you have a crumbly mixture that sticks together when pinched. Press the mixture into a Tupperware or any other square container. Chill in the fridge for 10 minutes before covering with the melted chocolate. Return to the fridge until the chocolate has hardened. Cut into squares.

*You can also make Butterfinger Balls by rolling the mixture into balls and coating the balls with the chocolate.*
