Clean Ginger Slice
Makes 12-15 small slices
Ginger slice, or ginger crunch, is a classic Kiwi treat and my ultimate guilty pleasure when I’m in New Zealand. I can’t get enough of the crunchy buttery base and the smooth spicy icing. Imagine my joy when I found this healthy version from fellow Kiwi @moveloveeat! The base is raw and the icing is just 3 ingredients and free from refined sugars. Dad will be dying to try this one!
1 cup cashews
1/2 cup large soft dates, pitted (or regular dates soaked in boiling water)
2 tsp ground ginger
4 Tbsp coconut oil
3 tsp maple syrup or honey
3 tsp ground ginger
If your dates are hard and/or dry, cover them with boiling water. Meanwhile, pulse the cashews in a food processor until you have a coarse flour. Add the dates and ginger and process until you have a mixture that sticks together. If too dry, add the water that the dates soaked in one teaspoon at a time until the mixture combines. You don’t want it too wet. Press the mixture into a container (I lined mine with parchment paper for easy removal) and put in the freezer.
Heat the icing ingredients in a small saucepan over low heat. Once melted and combined, remove from heat and place in the freezer for a couple of minutes, just until it starts to harden. Whisk into a smooth, caramel like icing and spread over the base. Return the slice to the freezer until hardened before cutting into squares and serving. *I would even double the icing amount to get my ideal base to icing ratio 🙂
