Coconut + Chocolate Chip Cookie Dough LÄRA BARS (raw, vegan, paleo, gluten free, dairy free, sugar free)

Mind blown. That’s pretty much all I can say right now. I took two of my favorite Lära Bar flavors, ‘Coconut Cream Pie’ and ‘Chocolate Chip Cookie Dough,’ and combined the flavors to create the mother of all bars: The Coconut Chocolate Chip Cookie Dough Bar. Who needs butter, oils, and sugar when you can make a clean treat that tastes this good!
1 cup raw cashews
1 cup large, soft dates (or soak regular dates in hot water for 10 minutes)
1/2 cup shredded, unsweetened coconut
3 Tbs chopped dark chocolate or raw cocoa nibs (optional)
Pinch sea salt
Process cashews in a food processor until finely chopped. Add dates, coconut, chocolate, and salt, and mix again until the dough sticks together and forms a ball. Now you can either make balls or form bars by pressing the mixture into a baking dish lined with plastic wrap. Cover with plastic wrap and place in the freezer for at least 30 minutes before slicing into bars. Wrap up each bar in plastic wrap or place in an airtight container. Store in the fridge for up to 3 weeks. (They won’t last that long, I promise!)
