Creamy Avocado Dressing (vegan, paleo, gluten free, dairy free, nut free, vegetarian)
Eating salad is one of the simplest ways to improve your diet and get huge health benefits. However, sometimes it feels like the only salads that taste good are actually bad for us, and the healthy salads are torturous to eat. I’ve found that the key to making a salad that is both delicious and nutritious is the dressing. This clean dressing gives you a boost of healthy fats while making all of those important greens, veggies, and nuts taste great. Because avocado is the best, right @dmcf11?
2 Tbsp olive oil
1 Tbsp fresh lime juice
1 small clove garlic
1/2 tsp sea salt
1/4 tsp pepper
1 Tbsp chopped cilantro, optional
1-3 Tbsp water, as needed
Blend all ingredients except water until smooth using an immersion blender or regular blender. Add water one Tbsp at a time until you reach your desired consistency. Serve either chilled or at room temperature with any salad.
