These Dark Chocolate-Chip Cookie Dough bites were a big hit with the team today. Even got a 👍🏾 from our head coach, who has previously claimed that there’s no such thing as a healthy treat that tastes good. I didn’t measure the ingredients very carefully, but the recipe is something like this:
2 cups (5 dl) raw cashews
1 cup (2.5 dl) large soft dates
1/2 cup (1 dl) unsweetened shredded coconut
1-2 Tbsp natural almond butter
1/2 bar of 85% dark chocolate
First process the cashews into a coarse flour. Then add everything else except the chocolate and mix well. It should stick together, so add more almond butter if the mixture is too dry. Add the chocolate and pulse until you have big chunks dispersed throughout the dough. Press into a container and freeze until hardened. Cut into little cubes. Add to yogurt for a cookie dough parfait!
