Easy Hummus (vegan, gluten free, dairy free, vegetarian, nut free)
Makes 1.5 cups/3.5 dl
This is my most basic hummus recipe that can be whipped up in minutes and easily adapted to make any flavor! Just throw in sun dried tomatoes, roasted red peppers, roasted garlic, etc.
1 can chickpeas, drained and rinsed
2 Tbsp tahini
1 garlic clove
1/4 cup (1/2 dl) olive oil
2 Tbsp fresh lemon juice
1/2 tsp salt
1/2 tsp pepper
Blend all ingredients in a food processor until smooth. Add water as necessary to reach desired consistency. Serve drizzled with olive oil. Can be stored in the fridge for 3-4 days.
