Easy Pickled Red Onion (vegan, paleo, gluten free, dairy free, nut free, vegetarian)
Makes 1 jar (In this video I doubled the recipe)
I’m not a fan of raw red onion, but give me pickled red onion and I will add it to everything! Especially great for topping salads, tacos, and burgers.
1 large red onion
3 Tbsp apple cider or white wine vinegar
1-2 tsp sweetener such as sugar, honey, or agave
1/4 tsp salt
Boil a kettle of water. Slice the onion into thin rings. In a large bowl whisk together the vinegar, sweetener, and salt until blended. In a colander over the sink, pour the boiling water over the onion slices. Shake to remove excess water. Add the onion to the bowl of vinegar mixture and stir to make sure all of the slices are coated by the mixture. Cover and refrigerate for at least one hour, stirring occasionally to make sure the all of the onion gets exposed to the liquid. Store in a jar in the fridge for a week.
