Fudge Birthday Cupcakes

Fudge Birthday Cupcakes (vegan, paleo, gluten free, dairy free)
Makes 4 cupcakes

A delicious chocolatey healthy treat for my new friend @racheldaly3 on her special day! 4 clean ingredients + blender + 15 minutes = dense fudge cupcakes. That’s my kind of math! And don’t forget to top with my easy Clean Chocolate Glaze that you can whip up while the cupcakes are baking!

Cupcakes:
1 banana
1/2 cup (1 dL) natural peanut butter
3 Tbsp cacao powder
2 Tbsp maple syrup (for vegan) or honey

Glaze:
2 Tbsp milk of choice
1 Tbsp maple syrup or honey
1 Tbsp cacao powder
1/2 tsp vanilla

Preheat oven to 350 F/175 C.
Mix all cupcake ingredients in a blender until thick and smooth. Add to a lined muffin tin and bake for 15 minutes. Meanwhile whisk together glaze ingredients. Let cupcakes cool before dipping into the glaze.
