Garlic-Lemon Shrimp with Zoodles (paleo, gluten free, dairy free, nut free)
Fast. Fresh. Flavorful. Get ready to add this dish to the rotation! The zoodles are optional, but highly recommended. I ordered my spiralizer from Amazon for $12.99 and I love it, especially since I’ve cut down on pasta.
1/2 pound raw shrimp, peeled and deveined
(Or 15-20 large shrimp)
Salt and pepper, to season
1 Tbsp olive oil
3 cloves garlic, minced
Juice of 1/2 lemon
1 zucchini, spiralized (optional)
Season the shrimp with salt and pepper, tossing well. Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds. Add the shrimp in a single layer and cook, undisturbed, for about 2 minutes. Turn over the shrimp and add the lemon juice and the zucchini noodles. (If NOT adding the zucchini noodles, cook shrimp 1 to 2 minutes more until cooked through and serve.) Cook until the zucchini is hot and has released its liquid. Serve immediately, adding salt and pepper to taste.
