Gluten-free Crisp Bread
Makes one sheet

3 eggs
4 Tbs water
4 Tbs coconut flour
1 cup almond flour
1/2 Tbs oregano
1/2 tsp sea salt
Handful grated Parmesan
Preheat oven to 460 degrees F/240 degrees C. Whisk the eggs and water until fluffy. Add flours, oregano, and salt. Mix well until a dough forms. Place dough between two pieces of parchment paper and roll out until it’s as thin as you can get it. Sprinkle the Parmesan over and bake, checking every 5 minutes. Mine took about 12 minutes before it started to brown on top. Leave to cool, then break into pieces and serve with pesto or hummus. It’s not too savory, so it could even taste good with some nut butter on top. *Try to roll it out as evenly as possible. Mine was thicker in the middle, so that part wasn’t as crispy.
