Grapefruit and Feta Salad (gluten free, nut free, vegetarian)
This gorgeous salad is the best way to celebrate the arrival of Spring!
Add slices of low-calorie and vitamin C rich grapefruit to a handful of roughly chopped fresh spinach leaves and warm quinoa. Crumble over some feta, and drizzle over your favorite dressing. For this particular salad I recommend a mixture of cold-pressed rapeseed oil, white wine vinegar, salt, and the grapefruit juice leftover on the cutting board.
