Green Omelette

Green Omelette (paleo, gluten free, dairy free, nut free)

I believe it’s important to eat something green for every meal, but breakfast is definitely the hardest. I love veggie omelettes or scrambles, but I’m not always in the mood for leafy greens first thing in the morning. This green omelette is the perfect solution- you will get all the benefits of the spinach without even noticing it, aside from the color of course!

2 eggs
Salt and pepper
Handful fresh or frozen (defrosted and drained) spinach
Oil or butter to coat pan

Blend the eggs, salt and pepper, and spinach in a blender. Blend until smooth and green. Heat the oil or butter in a skillet over medium heat. Add the egg mixture and cook for a few minutes. When almost cooked through, add any toppings you want and slide onto your plate, folding it in half.
