Green Power Pancakes! (gluten free, lactose free, nut free, sugar free)
Makes 12-15 pancakes
My favorite way to sneak greens into my breakfast. You won’t taste a thing 🍃💪🏾
1 cup (2 dl) gluten free oats
1 cup (2 dl) lactose free cottage cheese
1 large handful fresh spinach or 1/2 cup (1 dl) frozen spinach, defrosted
1 Tbsp vanilla
Add all ingredients to a blender and blend until smooth. Think pancake batter- if the mixture is too thick, add milk or water until you reach the right consistency. Heat some coconut oil in a skillet over medium heat. Pour batter onto the skillet one or two pancakes at a time. Flip when starting to bubble and cook for a minute on the other side. Repeat with remaining batter. Store in an airtight container in the fridge for up to 3-4 days.
