This recipe is from my former teammate Josée Bélanger (@josyb14) whose family owns a Sugar Shack, or a maple syrup business, in Coaticook, Quebec! It’s the perfect healthy treat for a hot day, or any day really, and it gets its sweetness from pure maple syrup…the best of which comes from Canada of course!
1 cup coconut milk (regular works best for that creamy texture)
1/3 cup cocoa powder
3-4 Tbs Canadian maple syrup (depending on how sweet you want it)
Whisk together the coconut milk, cocoa powder, and maple syrup. Pour into popsicle molds and freeze! If you don’t have popsicle molds, you can always use small dishes or cups and serve as ice cream and eat with a spoon instead!
