Lean Green Muffins (paleo, gluten free, dairy free, sugar free)
Makes 6 Muffins
Blend these up for some fluffy and delicious muffins loaded with nutrients and sweetened only with banana. An easy way to eat something green for breakfast!
1/2 cup (1 dl) natural peanut butter
1/4 tsp baking soda
1 tsp vanilla
Pinch sea salt
1 large handful fresh spinach
Optional: dark chocolate chips/chunks
Preheat oven to 400 F/205 C.
Blend all ingredients until smooth. (If you are adding chocolate chips stir those in after blending.) Pour into a lined muffin tin and bake for 10 minutes or until tops are browning and muffins are springy to the touch. Let cool before removing from pan and serving. Store covered in the fridge.
