Lemon Coconut Bliss Balls (raw, paleo, gluten free, dairy free)
Makes 16-18 balls
These raw balls are heart healthy and a fresh alternative to date-filled balls and bars (especially if you are allergic to dates @emmakete!). I like to serve them alongside my denser, richer Raw Chocolate Fudge Truffles (dates, almonds, cocoa, vanilla)- a match made in heaven!
1/2 cup raw almonds
2 cups unsweetened shredded coconut
2-3 Tbsp honey
Zest and juice of 1 lemon (I LOVE Meyer lemons!!!)
Finely chop the almonds before adding the rest of the ingredients and blending until the mixture sticks together. Roll into balls (or squeeze into balls- they’re a little crumbly) and store in the fridge.
