Lemon Goji Superfood Balls, made to order for the lovely @kicke63! Filled with ❤️ and packed with fiber, magnesium, iron, zinc, antioxidants, potassium, and omega 3s.
Make a batch of about 20 balls using 1/2 cup raw cashews, 1/2 cup dried apricots (soaked in hot water for 10 minutes), 1/4 cup goji berries, and the zest of 1 lemon. Process the cashews first into a fine meal. Then add everything else and blend until the mixture forms a ball inside the processor. Roll into balls! I coated with shredded coconut.
