Lemon Macaroons (vegan, paleo, gluten free, dairy free)
Makes 8 macaroons
This week’s #feelgoodfriday tip is to make your own treats from scratch instead of buying sugary snacks and sweets. This makes eating something sweet a conscious decision that actually takes some effort. It also lets you control how much sweetener is used- often you will find that traditional recipes use way more sugar than necessary. Here’s one of my favorite recipes to whip up when I’m craving something sweet. It’s a vegan and paleo version sweetened with maple syrup that tastes just like the ‘real thing.’
1 cup (2.5 dl) unsweetened finely shredded coconut
4 Tbsp almond flour
3 heaping Tbsp coconut oil, room temp
3 Tbsp maple syrup
Zest from 1/2 lemon
Squeeze fresh lemon juice
Preheat oven to 350 F/175 C.
Add all ingredients to a food processor and blend until you the mixture is combined and sticks together. Add more oil or maple syrup as necessary. Place small balls/mounds of mixture into a lined baking sheet. Bake for 10-12 minutes, just until the edges and tops are turning golden brown. Allow to cool to before serving. Store in an airtight container at room temp.
