Magical PB Blender Muffins

Magical PB Blender Muffins (GF, LF) Makes 6 muffins . Why are these muffins so magical? I never thought it could be possible to make fluffy, moist, and delicious muffins without flour, butter, or refined sugar. But it is, and with just a few common ingredients and a blender, your muffins are ready in under 15 minutes. (And then they're gone in under 5...) Abracadabra! . 1 large ripe banana 1 large egg 1/2 cup natural peanut butter (no added sugar or salt) 1 Tbsp honey 1 Tbsp vanilla 1/4 tsp baking soda Pinch sea salt . Preheat oven to 400 degrees F/205 degrees C. Throw all ingredients into a blender and blend until smooth and creamy. Pour the mixture into a greased muffin pan (or silicone muffin cups) and fill the cups 1/2 to 3/4 of the way full. Bake for 8-10 minutes, until the muffin tops are set and springy to the touch. Allow to cool and firm up a little in the pan before devouring (or frosting with my Dark Chocolate Glaze). . Dark Chocolate Glaze: -50 grams dark chocolate (I use 96%) -2 Tbs coconut oil -2 Tbs maple syrup . Carefully mix all ingredients together in a small pot on low heat until the chocolate is melted. Remove from heat and let cool until the glaze thickens to a spreadable consistency, about 10 minutes.
