Kale is crazy good for you, but not everybody is a fan of the King of the Cruciferous’ bitter flavor and toughness. Sure you can make kale chips, sauté your kale, or hide the taste in a green smoothie, but it turns out there’s actually a simple way to make your raw kale sweet, tender, and easy to digest: massage! Hello, kale salad!
1 bunch kale, rinsed, stems removed, and torn or chopped into bite-sized pieces.
1 Tbsp fresh lemon juice
Pinch sea salt
Put the kale in a large bowl. Squeeze in the lemon juice and add the salt. Massage the leaves for 5 minutes. They will release liquid, shrink in size, and become more vibrant in color. Making a salad? Add some olive oil and your toppings and you’re set!
