Merry Berry Oat Cakes

Merry Berry Oat Cakes (gluten free, dairy free, nut free, sugar free)
Makes 7-8 cakes
Joy to the world! We are celebrating Christmas with this delicious, nutritious, and super fast alternative to pancakes. They will fill you with long-lasting energy that we could all use this holiday season!
1 egg plus 2 egg whites (or 4 egg whites)
1 cup oats (sub GF)
1 cup frozen berries, defrosted and drained
1/4 tsp cinnamon
Coconut oil for coating skillet
Mix everything together well in a bowl. Melt some coconut oil in a skillet on medium heat and add spoonfuls of the mixture, shaping into small cakes or patties. Flip when the cakes are firm enough to slide the spatula under, about 1 minute. Cook the other side for another minute and then serve. These keep for a few days in the fridge and also taste great cold. Perfect for breakfast or snack on the go. Add nut butter for an extra boost!
