Mom’s Banana Scones

Mom’s Banana Scones (paleo, gluten free, dairy free)
Makes 3 scones (serves 1 Dad)

1 ripe banana
1 egg
1/2 cup (1 dl) almond flour
1 Tbs coconut flour
1 tsp baking powder
Pinch sea salt
Preheat oven to 400 degrees F/205 degrees C. Mash up the banana in a bowl using a fork. Add remaining ingredients and mix well. Spoon onto a lined baking sheet, creating 3 medium sized mounds. Bake 8-10 minutes until springy and starting to brown on top. *I like to add flax seeds, shredded coconut, even chia to the mixture to add texture and nutritional value. Have fun experimenting!
