No-Bake PB&J Bars

No-Bake PB&J Bars (Gluten free, dairy free, vegan, paleo)
Makes 12 large bars
This one is for my Americans out there! The crazy delicious combo of peanut butter and jelly (that nobody else seems to understand 🤷🏽‍♀️) in bar form for a healthy treat that is rich in healthy fat and high in fiber. I layered these bars so you get that oozy middle just like the sandwiches of our youth.
2 cups (4.5 dl) almond flour, or finely processed almonds
1/2 cup (1 dl) natural peanut butter *Can replace with almond butter!*
1/4 cup (1/2 dl) maple syrup
2 Tbsp coconut oil
1 tsp vanilla extract
2 cups (4.5 dl) fresh raspberries or defrosted and drained frozen raspberries
1/4 cup (1/2 dl) chia seeds
1 Tbsp coconut oil
Process the base/topping ingredients together until combined. Press about 2/3 of the mixture into a lined baking pan and put in the freezer to harden while making the filling. Make the filling by blending the raspberries, chia seeds, and coconut oil until smooth. Pour over the base and spread into an even layer. Sprinkle the remaining base mixture over the filling like a crumb topping. Freeze for at least 1 hour before slicing into bars. Store covered in the fridge.
