No-Bake PB&J Cookies

No-Bake PB&J Cookies
Makes 16 cookies

1/2 cup natural peanut butter (no added sugar or salt)
1/2 cup unsweetened shredded coconut
1/2 cup gluten free oats
1/4 cup ground flax seed
2 heaping Tbsp coconut oil, room temp
1 Tbsp honey (add more to taste)
Raspberry Chia Jam (or any favorite jam)

Mix everything together in a food processor until all of the ingredients are incorporated and the mixture sticks together. Squeeze/shape into balls and place onto tray. Press your thumb into the middle of each one and fill each thumbprint with a dollop of jam. Eat at room temperature or allow them to firm up in the fridge. Store in an airtight container in the fridge.
