Oatmeal Raisin Breakfast Cookies (vegan, gluten free, dairy free, nut free, sugar free)
Makes 9 cookies
This one’s for the vegan who won’t let anyone forget he’s vegan: @beastmodesoccer. Perfect for a breakfast or snack on the go, with added protein from hemp hearts. Naturally sweetened and deliciously chewy. I love eating cookies for breakfast!
1.5 bananas, mashed well
1 cup (2.5 dl) gluten free oats
3 Tbsp unsweetened applesauce
3 Tbsp milk of choice
1/2 tsp vanilla
1/2 tsp cinnamon
1/4 cup (1/2 dl) raisins (I used golden raisins because that’s what I had at home!)
3-4 Tbsp hemp hearts (optional)
Preheat oven to 350 F/175 C.
Mix all ingredients until well combined. Drop by the spoonful onto a lined baking sheet and bake 15-20 minutes, until golden. Store covered in the fridge for up to a week.
