Orange Almond Cookies (GF, LF, egg free)

Now I’m not saying these are good for you, but they’re a light and more natural alternative to cookies that are loaded with butter and refined flours and sugars. They’re bursting with citrus flavor and have that wonderful crisp-on-the-outside-soft-in-the-middle texture. Both gluten and non-gluten eaters will love these, and they’re the perfect quick treat because they require just 5 ingredients and 10 minutes in the oven.
1 cup almond flour
1/4 cup unsweetened shredded coconut
zest of 1 orange
3 Tbs coconut oil
1/4 cup honey
Preheat oven to 350 degrees F/175 degrees C.
Whisk together flour, shredded coconut, and orange zest. Add coconut oil and honey and stir well. Using your hands, roll dough into 8-9 balls and press lightly onto a parchment lined baking sheet. Bake for 10 minutes or until the bottoms are just turning golden. Make sure not to over bake or the bottoms will burn and the cookies will be dry.
**No oranges? Tastes great with lemon zest!
